Patagonian Toothfish is a cold water fish high in Omega 3. The flavour of our sauce is uniquely silky with a delicate flavour. Versatile in its use it enhances dishes from cooked meals to dressings and is perfect brushed over sushi or sashimi.

Much like our Wild Caught Australian Abalone products, it is quite the journey to bring this unique delicacy to you. From a freezing island located kilometers away from mainland Australia, to deliver a delicious silky smooth sauce to your door.
Our new Sea Sauce is made from Wild Caught Australian Patagonian Toothfish, sourced from Heard Island. Heard Island is located in the freezing Australian sub-Antarctic waters 4500 km south of Perth. It is Australia's most remote Commonwealth Managed Fishery, surrounding 14 spectacular glaciers and Australia's only active volcano, Big Ben. It is a harsh, beautiful and frigid environment, with precipitation including snow on 75% of days, air temperatures from -0.8° to 4.2°C, wave heights from 5 to 10 metres and wind speeds up to 95kph. Each fish is responsibly caught using a bottom longline consisting of a longline, attached to branchlines and hooks set across the seabed. This technique allows the fisherman to target the toothfish with minimal bycatch and effect on the environment. Feeding on prawns, crab, squid and other fish, the Patagonian Toothfish swims between 70-2000 metres beneath the surface.
Also know as Chilean Seabass, Mero and Merluza negra, this unique delicacy has a lasting aftertaste, a delicate, yet sweet, and rich flavour. Patagonian Toothfish has snow-white flesh when cooked, and is rich in both fat and Omega 3 content.
